Eppure, nonostante l\u2019Italia sia tra i principali produttori, lo conosciamo ancora poco.<br \/>\nL\u2019olio extravergine d\u2019oliva \u00e8 uno dei pochi alimenti le cui caratteristiche e qualit\u00e0 sono rimaste inalterate nell\u2019arco dei millenni. \u00c8 considerato uno degli alimenti cardine della dieta mediterranea.<br \/>\nIn Italia da tempo immemore, la coltivazione dell\u2019olivo, infatti, si diffuse nei territori della Magna Grecia; furono poi i Romani a estendere la coltivazione dell\u2019olivo in tutta la nazione.<\/p>\n<p>Oggi nel nostro Paese sono presenti oltre cinquecento cultivar di olive che danno vita a oli unici di cui siamo grandi produttori: il secondo produttore al mondo di olio di oliva.<\/p>\n<p>L\u2019olio extravergine d\u2019oliva \u00e8 davvero oro liquido, ricco di propriet\u00e0 benefiche e storia, considerato a tutti gli effetti un alimento nutraceutico (quegli alimenti o derivati alimentari cui si attribuiscono, oltre al valore nutrizionale di base, uno o pi\u00f9 benefici aggiuntivi). \u00c8 inoltre antiossidante; ha propriet\u00e0 antinfiammatorie; contiene vitamine (E e K) e acidi grassi benefici.<br \/>\nE pensare che l\u2019olio, in antichit\u00e0, veniva usato principalmente come combustibile per l\u2019illuminazione.<br \/>\nL\u2019etimologia delle parole luce e lampada deriva dal greco &#8220;elaion&#8221;, per l&#8217;appunto &#8220;olivo&#8221;. In cucina, insieme a vino e grano, divenne poi cardine della dieta in tutti i popoli del Mediterraneo, oggi le visite ai frantoi e ai musei dell\u2019olio sono interessati da un significativo afflusso turistico.<\/p>\n<p>L\u2019olio evo, tra le altre cose, aiuta a proteggersi dal colesterolo LDL (quello cattivo)<br \/>\n\u00c8 in grado, inoltre, di aiutare a proteggere dalle malattie cardiache, riducendo\u00a0l\u2019infiammazione e l\u2019ossidazione del\u00a0colesterolo LDL\u00a0(cattivo); migliorando la salute\u00a0dei vasi sanguigni; aiutando\u00a0la coagulazione del sangue; contribuendo ad abbassare\u00a0la pressione sanguigna.<br \/>\nQueste propriet\u00e0 sono da attribuire alla forma pi\u00f9 nobile e pura dell\u2019olio d\u2019oliva, ovvero l\u2019olio extravergine d\u2019oliva.<br \/>\nGli oli si dividono tra vergini e raffinati: i primi si ricavano da spremitura meccanica delle olive, \u201cche non causano alterazioni dell\u2019olio e che non comprendano altri trattamenti diversi dal lavaggio, dalla decantazione, dalla centrifugazione e dalla filtrazione\u201d. Quelli raffinati (come l&#8217;olio di oliva), vengono invece prodotti tramite processi meccanici e chimici.<br \/>\nL\u2019olio extravergine d\u2019oliva, il pi\u00f9 pregiato, \u00e8 classificato in base alla purezza; quello vergine d&#8217;oliva ha difetti poco percettibili; quello di oliva vergine lampante prima di essere venduto al consumatore diretto deve essere raffinato e si distingue per acidit\u00e0.
